So, Aura showed me about tacos. Coronado said he would, but all he does is eat them.

It starts with a tortilla, the bread of Mexico even before Columbus. Aura says it was always corn before European wheat came.. So now there is a choice. Rice? I don’t know. I get rice anyway.

I think I will stop and let Aura talk.

Most people just buy tortillas because making them is a drag, unless you’re a machine I suppose. And you can get rice tortillas. The way it goes is: You dry the grain, then boil it in water, then crush it into a paste. You flatten the paste into a circle shape, then cook it on a flat surface, like frying. The result is a tortilla.

Once you’ve got your tortillas, you can just eat them like bread on the side, or else basically make a sandwich.. If you put some other kind of food on it then fold it in half, you call it a taco. If you do the same thing but roll it up into a cylinder, you call it an enchilada. If you didn’t fry the disk you made yet, you can put it on the leaves of a corn cob instead and then add the other kinds of food, and then roll it and steam it to cook it. If you do that, you end up with a tamale. But that’s more complicated so most people just buy tamales. The other stuff that goes on tortillas is usually beans, capsicums, green tomato shavings, shreds of meat or fish. You eat tortillas and tacos with your fingers. If you spread something like cheese or sauce over enchiladas or tamales, you use a fork.

With all the research Coronado has done, I don’t see how he missed what was described as a special occasion when Cortés arranged the first ever taco feast for his captains.
